Greek Beef Burgers

Switch up your typical burger recipe with a savory Mediterranean remix. Juicy beef patties layered with smoky zucchini planks, smeared with yogurt-olive tapenade sauce, and topped with crumbled feta for salty sparks. Close your eyes and take a bite—you’re practically on a European seaside vacation.
Ingredients
- 1/4 cup Greek-style yogurt
- 1/2 cup olive tapenade (divided use)
- 1 pound ground beef
- Kosher salt, to taste
- Pepper, to taste
- 4 whole-grain hamburger buns, split and toasted
- Fresh spinach leaves
- 4 slices sweet onion, sautéed
- 1/4 cup crumbled feta cheese
- 1 large zucchini, sliced into planks and lightly grilled or pan-fried
Directions
- In a small bowl, combine yogurt and 1/4 cup olive tapenade. Cover and refrigerate until ready to use.
- In a large bowl, combine ground beef and remaining 1/4 cup olive tapenade. Mix lightly, but thoroughly. Shape into four 1/2-inch thick patties.
- Heat grill pan over medium heat until hot. Place patties in pan. Cook, turning occasionally, 10 to 12 minutes or until a probe thermometer inserted horizontally into center registers 160°F. Season with salt and pepper, to taste.
- Lay spinach and onions on bottom of each bun. Top with 1 tablespoon feta crumbles, burger, and zucchni. Dollop 2 tablespoons yogurt mixture over zucchini and cover with bun tops.
