Heirloom Tomatoes and Peach-O-Rama Peach Salad

The perfect summer recipe to enjoy when Peach-O-Rama peaches and heirloom tomatoes are at their best and brightest.

Ingredients

  • 2 heirloom tomatoes (1 1/2 pounds)
  • 2 tablespoons extra virgin olive oil, divided use
  • 2 teaspoons flaky finishing salt
  • 2 ripe peaches (1 1/2 pounds)
  • 1 or 2 burrata balls
  • 1 teaspoon Aleppo chile flakes or other dried pepper flakes
  • 2 sprigs fresh basil, thinly sliced (1/4 cup)

Directions

  1. Cut tomatoes into 12 wedges and place on a platter. Drizzle with 1 tablespoon olive oil and sprinkle with 1 teaspoon flaky salt. Set aside until ready to eat.
  2. Just before serving, cut peaches into 12 wedges and gently toss with tomatoes. Break open burrata and place in center of platter. Drizzle salad with remaining olive oil. Sprinkle with chili flakes and 1 teaspoon salt. Garnish with basil and serve.
