Skillet Chicken Nachos

This no-frills, speedy appetizer is about to become your go-to hosting hack for all kinds of gatherings. Simply pile the ingredients into a skillet and let the oven take care of the rest. You can make the nachos your own with toppings like diced avocado, chopped cilantro, or a squeeze of lime.

Ingredients

  • 8 ounces tortilla chips
  • 1 cup shredded rotisserie chicken
  • 1/2 cup canned black beans, drained, rinsed, and patted dry
  • 1 1/2 cups shredded cheddar cheese (about 6 ounces)
  • 1 Roma tomato, seeded and diced
  • 3 green onions, thinly sliced
  • 1 jalapeño pepper, thinly sliced, or 1/4 cup diced red bell pepper

Optional Ingredients

  • Diced avocado
  • Chopped cilantro
  • Prepared salsa
  • Mexican crema or sour cream
  • Sliced pickled jalapeños
  • Lime wedges

Directions

  1. Preheat oven to 425°F.
  2. Spread tortilla chips in cast iron skillet or on a sheet pan lined with parchment paper. Sprinkle with chicken, followed by beans, cheese, tomatoes, green onion, and jalapeño.
  3. Bake 4 to 5 minutes, just until cheese melts.
  4. Add optional toppings, if you like. Serve warm.
