Winter Wellness Salad
Serves 4
This gorgeous salad not only boasts a medley of textures and flavors, but it’s also super nutritious. The components are rich in vitamins, antioxidants, and dietary fiber. Use a variety of orange types—like navel, Cara Cara, and blood oranges. The bold array of color will cheer you through the dreary days of winter!
Ingredients
- 2 small beets, red or gold (see Cook's Tips)
- 2 cups radicchio leaves, chopped
- 2 cups frisée, tender light green fronds only
- 2 cups orange slices, rinds removed
- 1 persimmon, peeled and chopped
- 1/4 cup pomegranate arils
dressing
- 1 lime
- 3 tablespoons extra virgin olive oil
- 1 teaspoon honey
- kosher salt, to taste
- pepper, to taste
Directions
- Prepare beets: Preheat oven to 400°F. Trim tops and ends of beets. Wrap in aluminum foil. Roast 30 to 40 minutes, until easily pierced with a knife. Once cool enough to handle, use gloves or paper towels to remove peel. Cut into wedges.
- Compose salad by arranging all ingredients together on a platter except for the pomegranate arils. Sprinkle pomegranate arils over the top.
- Zest lime over the salad. Juice lime into a small bowl. Add olive oil and honey to the lime juice. Whisk vigorously. Season, to taste, with salt and pepper. Drizzle over salad.
